And the official results are in for yesterday’s Shamrock Shuffle…

photoOlympian Lisa Uhl finished in 25:54 and won. She just barely beat me. The male winner, a high school teacher from California, finished in 23:08. That is some serious speed. Deana Kastor holds the female course record with a 24:36 finish in 2005. That’s under a 5 min/mile pace. Jiminy cricket.

After the race yesterday I suggested to Lu that we go out for salads. I made a fuss that we specifically go to a place with really good salads and we did. Then I ordered an egg white omelet. It was quite random but it totally hit the spot. After that late breakfast lunch, we did a little shopping around the city. I saw a great Shamrock Shuffle shirt in Niketown. “Nothing to do with luck.” Isn’t this so true? It’s all about the hard work.

We spent the evening lounging in front of the TV. You guys would be proud of me because I even did some foam rolling. We had a healthy & tasty dinner of chicken/broccoli/brussels sprouts/quinoa. Good stuff. You should do yourself a favor and make oven-baked brussels sprouts. Drizzle the sprouts with some olive oil. Sprinkle kosher salt and freshly cracked pepper. Stick them in a 425 degree oven for 30 minutes or until browned. Don’t forget to open the oven and shake the baking sheet every ten minutes or so to ensure they cook evenly. You won’t regret making these. Sometimes I dream about them.

Now this bean is headed to work for the day. Looking forward to being off for the next couple days after today’s shift. Everybody go out there and make it a good day.

  1. Congratulations on your time, that is a great pace!! And I absolutely adore roasted brussel sprouts. They are my go to veggie and it is so unfortunate that people won’t even try them!

      You have to make these. They are seriously the best. I walked in the door after work tonight and ate them straight out of the tupperware cold before I even sat down. Mmm.

  3. I have only recently fallen in love with brussel sprouts. I make them the same way- YUM!!
